How many times have you heard of the hard cardinal rules for matching up wines and food, from Chardonnay and seafood to Caberet Sauvignon and steaks or chops? Well, challenging the guests to break the rules and pair differently is “Paired” at Link, Sheraton Hyderabad that couples distinctive flavors to create unexpected taste sensations.
Was happy to have been invited for a one of its kind masterclass where Preetam Rai, Assistant Manager F&B who also is an in-house expert on “Paired” guided us with premium wines and selected craft beers while Chef Kapil Dubey – Executive Chef dishes out some artisanal mix of small plates and eclectic bar snacks.
The evening began with blind tasting of five wine labels – One sparkling, two white & two red with eight classical dishes that were creative and locally relevant. Each of the bloggers were asked to explore the tastes of the wines with these dishes and draw their own favorite pairing.
Absolutely loved the Smoked Salmon that was served on a choux puff with a dollop of cream cheese while the Asian spiced lamb meat balls with a hint of paprika was just outstanding. The deep fried Jalapenos stuffed with cream cheese on offer was certainly the most interesting of the vegetarian snacks which iam sure would appeal to a city who heavily snack on Mirchie Bhajji. Litchi Ke kebab was another unusual yet good snack on offer that was filled with cottage cheese & nuts. Aloo Mutter ki Tikki, Sauteed Mushroom, Chicken Tikka Spring Roll and Garlic Shrimps were other additions on the menu which were good in their own different league.
The wines on offer were specially picked from the curated list of Sheraton Selects – a catalogue of premium wines which is rated 85 points or higher by Wine Spectator. Chandon Brut Classic Sparkling with its seductively rich and delicately fresh crispiness of apple and fig went perfectly well with the Garlic Shrimps while Jacobs Creek Chardonnay had strong notes of melon & fresh fruit flavors that complimented the smoked flavors of the salmon. The bright, vivid and intense flavor of raspberry was quite evident in La Corte Refosco with a slight hint of peppery basil leaf. I enjoyed this with the simple sautéed mushroom as well as the jalapenos.
Grover’s Zampa Cabernet Shiraz with its delicately spiced aroma of cherry and cocoa perfectly matched the Chicken Tikka Spring Roll and Aloo Mutter Ki Tikki on offer while Grover’s Zampa Sauvignon Blanc – a medium bodied wine was a perfect aperitif for robust deep fried jalapenos.
All in all “Paired” is totally an innovative, exciting and quite a unique experience where one can explore different flavors to create surprising taste impressions. The pricing is quite competitive with the small plates ranging from Rs 250 to Rs 320 and the wines from 900 to 2500. The beers are priced at Rs 650.
