Prego, Westin Hyderabad Mindspace : Welcomes Chef Ravi Kumar Nayak

Every time I walk into Prego I’m reminded of the fresh, delicious and artistically prepared Italian delights that I have in store. Prego at Westin Hyderabad Mindspace  has a new Italian Sous Chef – Ravi Kumar Nayak, so when an invite for an exclusive preview of Chef Ravi’s new menu landed in my Inbox, I couldn’t wait but be there to relish it.

A young and youthful Chef Ravi Kumar Nayak came across as a humble, reticent and a man of less words. Only later you’d realize that his creations are more verbose than himself.  Started off with the medium bodied and food friendly Cabernet Shiraz, followed by fresh focaccia served with a tangy tomato basil sauce.

Pan seared Goat Cheese was colorful and full of goodness. The flavor of beetroot puree was slightly enhanced thanks to the subtle bite of goat cheese and a drizzle of mustard pear puree. Up next was an intimidating yet alluring pan seared scallop. Delicate scallops complemented perfectly with the sweet & sour caponata made of tomatoes, onions and raisins while creamy cauliflower with its less starchy texture was used as an alternate for potato mash.

Consomme is one of those chef special dishes which is hard to get right. Clear tomato brandy consommé that was served was quite simple and delicate in its flavor while basil intensified the otherwise cheesy crespelle.

Potato & mushroom ravioli

Potato & mushroom ravioli with the creaminess of the saffron sauce made a dynamic duo in this ravioli dish. Duck Confit Tortellini with a red wine sauce blended ably with the strong orange zest which was an eye pleaser too. The coarsely textured Pomegranate Granita served as the perfect palate cleanser was an instant hit on the table.

Full bodied Zucchini served with the spicy cabernet sauvignon gastrique was first of the mains – rested elegantly on wilted spinach was a delight in every bite ! The highlight of the evening however was the braised lamb with the dressing of rosemary that played a delightful hide & seek on the palate. Sous vide assorted seafood which followed next was one delicious seafood stew I’ve had in a long time was quite an addictive.

The tiramisu – a signature at Prego was as sinful as ever but the innovation was in the chef’s version of the decadent mascarpone parfait that was as refreshing as it could get. Frozen coffee marshmallow, pineapple sorbet, lightly sweetened mascarpone cream make this parfait a sophisticated dessert a perfect one for your date night.

This new menu is worth an indulgence. So book mark this and head to Prego for some fresh and innovative Italian fare.
